Yucca with Mojo Sauce

One of my favorite dishes. Yucca is a delicious root vegetable – much like a potato – which is rich in carbohydrates, fiber, folate, vitamin C, and potassium. Yucca is also known as Cassava root. The Mojo Sauce adds a lemony-garlic flavor to top it off. Thanks to my aunt Isabel for this recipe.

DIRECTIONS

Peel and clean 1-1/2 lbs of fresh Yucca root, halved and in chunks. Boil in water for about 5 minutes. Pour in cold tap water to shock it into softness (“El Susto”), continue to boil until tender to a fork.

MOJO SAUCE

1 teaspoon salt
1 lime juice
6 garlic cloves
1/2 cup olive oil
1 onion, chopped fine

Mash garlic cloves into salt with mortar and pestle (or use food processor).

Add garlic, lemon juice, and onions to olive oil in a separate pan, heat until bubbling, then pour over yucca.

Toss yucca & sauce “lightly” cooking to saute over medium heat; till barely brown but not CRISP!

Serve.
